The fooddoc is a Professor of
Nutrition and Chair of the Department of Nutrition and Dietetics at the
East Carolina University.
He has a PhD in Nutrition Science and a Masters degree in Food

Educator: Dr. Forsythe is dedicated to educating students and consumers
about nutrition issues. He is especially
is interested in food regulation and the safety and efficacy of dietary
supplement and phytochemicals. He
has taught undergraduate and
graduate courses in nutrition and food science and is the author of the textbook
Nutrition and You with Readings.
Research:
Dr. Forsythe’s research has
focused on the effects of dietary ingredients, especially protein and dietary
fiber on cholesterol metabolism. More recently his research has looked food
safety issues and dietary supplement usage.
Consulting: The fooddoc has worked with a number of food companies
on food product development and food regulations issues.
He is available to speak on food safety, food regulations and laws, and
dietary supplements. He also has
made presentation on effective leadership and how to effectively set goals
within a group or organization.
